- 2 cans black beans, drained and rinsed
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- Juice of 1 lime
- Fresh cilantro for garnish
Instructions
- In the Instant Pot, select the sauté function. Add olive oil and sauté the onion until translucent. Add garlic and bell pepper, cooking for another 2 minutes.
- Add black beans, vegetable broth, cumin, smoked paprika, salt, and pepper. Ensure everything is well combined.
- Close the lid and set to high pressure for 10 minutes.
- Once done, release the pressure and stir in lime juice.
- Blend the soup for a creamy texture or leave it chunky as desired.
- Serve hot, garnished with fresh cilantro.
Notes
Rinsing canned beans removes excess sodium. Adjust thickness by blending longer or adding more broth.
