- 1 can (15 oz) black beans, drained and rinsed
- 1 cup long-grain rice (jasmine or basmati)
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 2 tbsp olive oil
- Juice of 1 lime
Instructions
- Prepare your ingredients: Chop the onion and mince the garlic.
- Sauté aromatics: In a large skillet over medium heat, heat the olive oil, add the onion and sauté for about 5 minutes until translucent, then add garlic and cook for another 30 seconds.
- Add black beans: Pour the black beans, vegetable broth, and cumin into the skillet, stir and simmer for about 5 minutes.
- Cook the rice: Boil water in a separate pot as per rice package instructions, add rinsed rice and salt, cover, and cook until fluffy (15-20 minutes).
- Combine: Gently fold cooked rice into the black bean mixture without mashing the beans.
- Finish with lime juice: Squeeze fresh lime juice over the dish before serving.
Notes
Rinse canned beans before using to improve taste and reduce sodium. Adjust seasoning to taste.
