Description

A hearty and nutritious dish featuring tender black beans, fluffy rice, and seasoned with garlic, onion, and lime juice.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup long-grain rice (jasmine or basmati)
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 cups low-sodium vegetable broth
  • 2 tsp ground cumin
  • 2 tbsp olive oil
  • Juice of 1 lime

Instructions

  1. Prepare your ingredients: Chop the onion and mince the garlic.
  2. Sauté aromatics: In a large skillet over medium heat, heat the olive oil, add the onion and sauté for about 5 minutes until translucent, then add garlic and cook for another 30 seconds.
  3. Add black beans: Pour the black beans, vegetable broth, and cumin into the skillet, stir and simmer for about 5 minutes.
  4. Cook the rice: Boil water in a separate pot as per rice package instructions, add rinsed rice and salt, cover, and cook until fluffy (15-20 minutes).
  5. Combine: Gently fold cooked rice into the black bean mixture without mashing the beans.
  6. Finish with lime juice: Squeeze fresh lime juice over the dish before serving.

Notes

Rinse canned beans before using to improve taste and reduce sodium. Adjust seasoning to taste.
