- 1 cup long-grain rice (jasmine or basmati)
- 3 cloves garlic, minced
- 1 medium onion, chopped
- 2 cups low-sodium vegetable broth
- 2 tsp ground cumin
- 2 tbsp olive oil
- Juice of 1 lime
Instructions
- Prepare your ingredients: Start by chopping the onion and mincing the garlic.
- Sauté aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another 30 seconds.
- Add black beans: Pour in the rinsed black beans, vegetable broth, and ground cumin. Stir to combine and let simmer for about 5 minutes.
- Cook the rice: Boil water in a separate pot according to rice package instructions. Add the rinsed rice and a pinch of salt; cover and cook until fluffy.
- Combine: Once the rice is cooked, gently fold it into the black bean mixture, being careful not to mash the beans.
- Finish with lime juice: Squeeze fresh lime juice over the dish before serving.
Notes
Use fresh ingredients for better flavor and rinse canned beans to reduce sodium. Adjust rice cooking method based on rice type.
