- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 8 oz fresh button or cremini mushrooms, sliced
- 2 tbsp freshly cracked black pepper
- 4 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- ยผ cup low-sodium soy sauce
- ยฝ cup chicken broth
- 2 tbsp vegetable oil (canola or sunflower)
- 2 green onions, chopped for garnish
- 1 tbsp cornstarch
- 1 tsp sugar
Instructions
- Wash and chop the vegetables. Dice the chicken into bite-sized pieces for even cooking.
- In a bowl, mix together the soy sauce, garlic, ginger, and cornstarch. Toss the chicken pieces into this mixture until well-coated. Let marinate for at least 30 minutes.
- Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken, cooking until golden brown on all sides.
- Remove the chicken from the skillet and set aside. Add sliced mushrooms and sautรฉ for about 5 minutes until tender.
- Return chicken to the skillet with mushrooms. Pour in the chicken broth, add sugar and cracked black pepper, stirring everything together.
- Simmer for 5-7 minutes, allowing the sauce to thicken and coat the chicken and mushrooms nicely.
- Serve hot over cooked rice or noodles, garnished with chopped green onions.
Notes
Fresh black pepper enhances flavor significantly. Marinate the chicken for a few hours for the best results. Experiment with different mushroom varieties for extra flavor.
