Description

A flavorful dish combining juicy chicken, earthy mushrooms, and the kick of freshly cracked black pepper, perfect for a quick weeknight meal.


Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 8 oz fresh button or cremini mushrooms, sliced
  • 2 tbsp freshly cracked black pepper
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • ยผ cup low-sodium soy sauce
  • ยฝ cup chicken broth
  • 2 tbsp vegetable oil (canola or sunflower)
  • 2 green onions, chopped for garnish
  • 1 tbsp cornstarch
  • 1 tsp sugar

Instructions

  1. Wash and chop the vegetables. Dice the chicken into bite-sized pieces for even cooking.
  2. In a bowl, mix together the soy sauce, garlic, ginger, and cornstarch. Toss the chicken pieces into this mixture until well-coated. Let marinate for at least 30 minutes.
  3. Heat the vegetable oil in a large skillet over medium-high heat. Add the marinated chicken, cooking until golden brown on all sides.
  4. Remove the chicken from the skillet and set aside. Add sliced mushrooms and sautรฉ for about 5 minutes until tender.
  5. Return chicken to the skillet with mushrooms. Pour in the chicken broth, add sugar and cracked black pepper, stirring everything together.
  6. Simmer for 5-7 minutes, allowing the sauce to thicken and coat the chicken and mushrooms nicely.
  7. Serve hot over cooked rice or noodles, garnished with chopped green onions.

Notes

Fresh black pepper enhances flavor significantly. Marinate the chicken for a few hours for the best results. Experiment with different mushroom varieties for extra flavor.
