Description

Ingredients

  • 2 large eggs
  • ¼ cup milk
  • ¼ cup maple syrup or honey
  • 1 tsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • ½ cup old-fashioned rolled oats
  • ½ tsp baking powder
  • 1 cup fresh or frozen blueberries
  • Fresh blueberries (for topping)
  • Powdered sugar (for serving)
  • A drizzle of maple syrup or honey (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a large mixing bowl, whisk together the cottage cheese, eggs, milk, maple syrup or honey, vanilla extract, cinnamon, and salt.
  3. Stir in the rolled oats and baking powder gently to combine.
  4. Fold in the blueberries carefully without overmixing.
  5. Pour the mixture into the prepared baking dish, top with remaining blueberries, and bake for 30-35 minutes or until golden.
  6. Cool for 5-10 minutes before slicing and serving with powdered sugar and maple syrup if desired.
