- 1 ½ cups All-purpose flour
- ½ cup Granulated sugar
- 2 tsp Baking powder
- ½ tsp Baking soda
- ½ tsp Salt
- 1 Large egg
- ½ cup Milk
- ¼ cup Vegetable oil
- 1 tsp Vanilla extract
- 1 cup Fresh blueberries
- 4 oz Cream cheese, softened
- ½ cup Brown sugar (for streusel)
- ¼ cup All-purpose flour (for streusel)
- 2 tbsp Butter, melted (for streusel)
- 1 tsp Cinnamon (for streusel)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- Whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
- Mix the egg, milk, vegetable oil, and vanilla extract in another bowl until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in the fresh blueberries gently.
- Blend the cream cheese with 2 tablespoons of the muffin batter until smooth.
- Fill the muffin liners halfway with batter, add a dollop of the cream cheese mixture, and cover with more batter.
- Mix the brown sugar, flour, melted butter, and cinnamon for the streusel topping until crumbly.
- Sprinkle the streusel mixture on top of each muffin.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool for a few minutes before serving.
Notes
Don’t overmix the batter to keep muffins fluffy. Enjoy with coffee or tea.
