Description

Delightful muffins combining tart blueberries with creamy cream cheese and a crunchy streusel topping, perfect for breakfast or as a sweet snack.


Ingredients

  • 1 ½ cups All-purpose flour
  • ½ cup Granulated sugar
  • 2 tsp Baking powder
  • ½ tsp Baking soda
  • ½ tsp Salt
  • 1 Large egg
  • ½ cup Milk
  • ¼ cup Vegetable oil
  • 1 tsp Vanilla extract
  • 1 cup Fresh blueberries
  • 4 oz Cream cheese, softened
  • ½ cup Brown sugar (for streusel)
  • ¼ cup All-purpose flour (for streusel)
  • 2 tbsp Butter, melted (for streusel)
  • 1 tsp Cinnamon (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. Whisk together the flour, granulated sugar, baking powder, baking soda, and salt.
  3. Mix the egg, milk, vegetable oil, and vanilla extract in another bowl until well combined.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in the fresh blueberries gently.
  6. Blend the cream cheese with 2 tablespoons of the muffin batter until smooth.
  7. Fill the muffin liners halfway with batter, add a dollop of the cream cheese mixture, and cover with more batter.
  8. Mix the brown sugar, flour, melted butter, and cinnamon for the streusel topping until crumbly.
  9. Sprinkle the streusel mixture on top of each muffin.
  10. Bake for 20-25 minutes or until a toothpick comes out clean.
  11. Cool for a few minutes before serving.

Notes

Don’t overmix the batter to keep muffins fluffy. Enjoy with coffee or tea.
