Decadent cookies combining creamy filling and rich chocolate ganache, inspired by the classic Boston cream pie.

- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ¾ cup milk
- 1 cup heavy cream
- ½ cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
- 1 ½ cups dark chocolate chips, melted
- ¼ cup heavy cream (for ganache)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
- In a separate bowl, cream the butter and sugar until light and fluffy for about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the flour mixture, mixing just until combined.
- Drop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart. Flatten each ball slightly.
- Bake for 10-12 minutes or until the edges turn golden. Allow to cool completely on a wire rack.
- To make the cream filling, whisk together heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- For the ganache, combine melted chocolate chips and heavy cream and stir until smooth.
- Assemble the cookies by placing a dollop of the cream filling between two cookies and drizzle ganache on top.
Notes
Experiment with different chocolate types for the ganache or add a splash of almond extract for unique flavor.
