Description

Decadent cookies combining creamy filling and rich chocolate ganache, inspired by the classic Boston cream pie.


Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ¾ cup milk
  • 1 cup heavy cream
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)
  • 1 ½ cups dark chocolate chips, melted
  • ¼ cup heavy cream (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
  3. In a separate bowl, cream the butter and sugar until light and fluffy for about 2-3 minutes. Add the egg and vanilla extract, mixing until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the flour mixture, mixing just until combined.
  5. Drop spoonfuls of dough onto the baking sheet, spacing them about 2 inches apart. Flatten each ball slightly.
  6. Bake for 10-12 minutes or until the edges turn golden. Allow to cool completely on a wire rack.
  7. To make the cream filling, whisk together heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  8. For the ganache, combine melted chocolate chips and heavy cream and stir until smooth.
  9. Assemble the cookies by placing a dollop of the cream filling between two cookies and drizzle ganache on top.

Notes

Experiment with different chocolate types for the ganache or add a splash of almond extract for unique flavor.
