Description

Delightful cookies that combine the rich flavors of Boston cream pie with a soft, cake-like texture and creamy filling.

Ingredients

Scale
  • 1 cup butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup pastry cream (or vanilla pudding)
  • 1 cup chocolate glaze or melted chocolate for topping

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. Add the eggs and vanilla, mixing until combined.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Drop tablespoon-sized balls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Allow the cookies to cool completely.
  9. Once cooled, fill the center of each cookie with pastry cream.
  10. Drizzle or dip the tops in chocolate glaze.
  11. Let set before serving and enjoy!

Notes

Ensure that cookies are cooled completely before filling to prevent the pastry cream from melting.
