- 4 oz Boursin cheese
- 4 slices of bacon, chopped
- 2 cups fresh broccoli florets
- 2 tablespoons olive oil

Instructions
- Cook the gnocchi according to package instructions in a large pot of boiling water. Drain and set aside.
- In a large skillet over medium heat, add olive oil and chopped bacon. Cook until crispy, about 5-7 minutes.
- Add the broccoli florets to the skillet and sauté until bright green and tender, about 3-4 minutes.
- Stir in the drained gnocchi and Boursin cheese, tossing until well coated and heated through, about 2-3 minutes.
- Season with salt and pepper to taste and serve hot, topped with grated Parmesan cheese.
Notes
For a lighter option, consider using turkey bacon or a lower-fat cheese. If you have leftover gnocchi, add them straight to the skillet with a splash of broth to loosen them up.
