- 4 oz Boursin cheese
- 4 strips bacon, diced
- 2 cups fresh broccoli florets

Instructions
- Cook the potato gnocchi according to package instructions. Drain and set aside.
- In a large skillet over medium heat, add the diced bacon and cook until crispy, about 5-7 minutes.
- Add the broccoli florets to the skillet and sauté for 3-4 minutes until tender.
- Stir in the cooked gnocchi with the bacon and broccoli, then add the Boursin cheese. Mix until the cheese is melted and everything is well combined.
- Drizzle with olive oil, and season with salt and pepper to taste.
- Serve warm, garnished with grated Parmesan cheese if desired.
