- 1 pound potato gnocchi
- 2 tablespoons olive oil
- 4 slices bacon, chopped
- 2 cups fresh broccoli florets
- 8 ounces Boursin cheese (herb and garlic flavor)
- 0.5 cup chicken or vegetable broth (or pasta water)
- 1 teaspoon garlic powder
- Salt and pepper, to taste
- 0.25 cup grated Parmesan cheese (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top. Drain and set aside.
- Cook the Bacon: In a large skillet over medium heat, heat olive oil and add chopped bacon. Cook until crispy, about 5-7 minutes. Remove bacon with a slotted spoon, leaving drippings in the skillet.
- Sauté Broccoli: In the same skillet, add broccoli florets and sauté for about 4-5 minutes until tender and vibrant. Sprinkle garlic powder and season with salt and pepper.
- Combine Ingredients: Add cooked gnocchi back to the skillet with broccoli. Pour in broth and add Boursin cheese. Stir until cheese melts and forms a creamy sauce. Adjust consistency if needed with more broth.
- Finish and Serve: Fold in crispy bacon and adjust seasonings if necessary. Serve warm, garnished with Parmesan cheese and parsley.
Notes
For a vegetarian option, substitute the bacon with mushrooms and use vegetable broth.
