- 1 pound potato gnocchi
- 2 tablespoons olive oil
- 4 slices bacon, chopped
- 2 cups fresh broccoli florets
- 8 ounces Boursin cheese (herb and garlic flavor)
- 0.5 cup chicken or vegetable broth (or pasta water)
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 0.25 cup grated Parmesan cheese (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the gnocchi in a large pot of salted boiling water until they float, then drain and set aside.
- In a skillet, heat olive oil over medium heat, add chopped bacon, and cook until crispy, then remove and set aside, keeping the drippings.
- Sautรฉ the broccoli in the bacon drippings for 4-5 minutes, then stir in garlic powder and season with salt and pepper.
- Combine cooked gnocchi, sautรฉed broccoli, broth, and Boursin cheese in the skillet, and stir until creamy.
- Fold in crispy bacon, adjust seasoning, and serve warm garnished with Parmesan and parsley.
Notes
For a creamier sauce, add a splash of heavy cream if desired.
