Description

A comforting dish featuring creamy Boursin cheese, savory bacon, and vibrant broccoli, all combined with pillowy potato gnocchi.


Ingredients

  • 1 pound potato gnocchi
  • 2 tablespoons olive oil
  • 4 slices bacon, chopped
  • 2 cups fresh broccoli florets
  • 8 ounces Boursin cheese (herb and garlic flavor)
  • 0.5 cup chicken or vegetable broth (or pasta water)
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 0.25 cup grated Parmesan cheese (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the gnocchi in a large pot of salted boiling water until they float, then drain and set aside.
  2. In a skillet, heat olive oil over medium heat, add chopped bacon, and cook until crispy, then remove and set aside, keeping the drippings.
  3. Sautรฉ the broccoli in the bacon drippings for 4-5 minutes, then stir in garlic powder and season with salt and pepper.
  4. Combine cooked gnocchi, sautรฉed broccoli, broth, and Boursin cheese in the skillet, and stir until creamy.
  5. Fold in crispy bacon, adjust seasoning, and serve warm garnished with Parmesan and parsley.

Notes

For a creamier sauce, add a splash of heavy cream if desired.
