Description

A comforting dish that combines creamy Boursin cheese, crispy bacon, and fresh broccoli with fluffy potato gnocchi.


Ingredients

  • 16 oz potato gnocchi
  • 4 oz Boursin cheese
  • 4 slices bacon, chopped
  • 2 cups fresh broccoli florets
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Parmesan cheese for serving (optional)

Instructions

  1. Cook the potato gnocchi according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy.
  3. Add the broccoli florets to the skillet and sauté for about 5 minutes until tender.
  4. Reduce heat to low and stir in the Boursin cheese until melted and creamy.
  5. Add the cooked gnocchi to the skillet, mixing well to combine. Season with salt and pepper to taste.
  6. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

For a vegan version, substitute Boursin cheese with dairy-free cream cheese and bacon with smoked tempeh. Store leftovers in an airtight container in the fridge for up to three days.
