- 16 oz potato gnocchi
- 4 oz Boursin cheese
- 4 slices bacon, chopped
- 2 cups fresh broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
- Parmesan cheese for serving (optional)
Instructions
- Cook the potato gnocchi according to package instructions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add the chopped bacon and cook until crispy.
- Add the broccoli florets to the skillet and sauté for about 5 minutes until tender.
- Reduce heat to low and stir in the Boursin cheese until melted and creamy.
- Add the cooked gnocchi to the skillet, mixing well to combine. Season with salt and pepper to taste.
- Serve hot, garnished with grated Parmesan cheese if desired.
Notes
For a vegan version, substitute Boursin cheese with dairy-free cream cheese and bacon with smoked tempeh. Store leftovers in an airtight container in the fridge for up to three days.
