- 2 cups broccoli florets
- 1 cup shredded carrots
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup milk or cream
- 2 cups shredded cheddar cheese
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add onion and garlic; sauté until soft and fragrant.
- Add the broccoli florets and shredded carrots; cook together for a few minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Then reduce heat and let it simmer until broccoli is tender, about 10 minutes.
- Use an immersion blender to blend the soup to your desired consistency.
- Stir in the milk and cheddar cheese until melted and the mixture is smooth.
- Season with salt and pepper to taste. Serve warm!
