Instructions
- In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, sautéing until soft and fragrant, about 3-5 minutes.
- Add the broccoli florets to the pot and cook for a few more minutes until they start to soften, ensuring they soak up the flavors.
- Pour in the broth and bring to a boil. Once boiling, reduce the heat and let it simmer for about 10-15 minutes until the broccoli is tender and bright green.
- Using an immersion blender, carefully puree the soup until smooth. If not using an immersion blender, transfer the soup in batches to a regular blender.
- Stir in the milk or cream and bring the soup back to a gentle simmer.
- Add the shredded cheddar cheese, stirring until it melts and combines beautifully.
- Taste and season with salt and pepper to your liking, adjusting the seasoning as necessary.
- Serve hot, garnished with optional seasonal veggies or seeds if desired.
Notes
For a thicker soup, blend less or add more cheese. For lighter options, consider half-and-half instead of milk.
