- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 cups fresh broccoli florets
- 1 cup long-grain white rice (or jasmine rice)
- 1 ½ cups shredded sharp cheddar cheese
- 2 cups low-sodium chicken broth
- ½ cup sour cream
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, cook cubed chicken for 7-10 minutes until browned and cooked through.
- Stir in chopped broccoli and uncooked rice; cook for an additional 3 minutes.
- Mix in the chicken broth, sour cream, onion powder, garlic powder, salt, and pepper until well combined.
- Transfer the mixture to a greased baking dish and top with shredded cheddar cheese.
- Bake uncovered for 30-35 minutes until bubbly and golden brown.
Notes
Don’t overcook the chicken. Use fresh broccoli for a better texture. This dish can be prepared in advance.
