Description

Enjoy a comforting Broccoli Mac and Cheese that blends creamy cheesy pasta with nutritious broccoli for a delicious meal for the whole family.

Ingredients

Scale
  • 2 cups elbow macaroni
  • 3 cups broccoli florets
  • 4 tablespoons unsalted butter
  • 3 tablespoons all-purpose flour
  • 2 ½ cups whole milk
  • 2 cups sharp cheddar cheese, shredded
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon Dijon mustard

Instructions

  1. Boil pasta and broccoli: Bring a large pot of salted water to boil, add elbow macaroni, and cook for 6 minutes. Add broccoli florets for the last 2-3 minutes, then drain.
  2. Make the roux: In a saucepan over medium heat, melt butter and whisk in flour to form a roux, cooking until golden (1-2 minutes).
  3. Add milk: Gradually whisk in milk until the mixture thickens slightly. Reduce heat to prevent burning.
  4. Cheesy mix: Stir in cheddar cheese, Dijon mustard, garlic powder, salt, and pepper until melted and smooth.
  5. Combine: Mix drained pasta and broccoli into the cheese sauce and stir well to coat.
  6. Serve: Enjoy hot, optionally garnished with extra cheese.

Notes

Use a good quality cheddar for richer flavor. Feel free to add other veggies for variety.
