- 2 packs of ramen noodles
- 2 cups broccoli florets
- 1 cup sliced mushrooms
- 4 cups vegetable broth
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1-2 minutes.
- Add the sliced mushrooms and broccoli florets to the pot. Stir-fry for about 3-4 minutes until they start to soften and turn slightly golden.
- Pour in the vegetable broth and soy sauce, then bring everything to a boil.
- Once boiling, add the ramen noodles and cook according to package instructions, typically 3-5 minutes.
- After the noodles are cooked, taste and adjust seasoning with salt and pepper as needed.
- Serve hot, garnished with chopped green onions.
Notes
Use high-quality vegetable broth for the best flavor. You can add tofu or chicken for extra protein. Store the broth and noodles separately if you have leftovers.
