Description

Ingredients

  • 2 packs of ramen noodles
  • 2 cups broccoli florets
  • 1 cup sliced mushrooms
  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, and sauté until fragrant, about 1-2 minutes.
  2. Add the sliced mushrooms and broccoli florets to the pot. Stir-fry for about 3-4 minutes until they start to soften and turn slightly golden.
  3. Pour in the vegetable broth and soy sauce, then bring everything to a boil.
  4. Once boiling, add the ramen noodles and cook according to package instructions, typically 3-5 minutes.
  5. After the noodles are cooked, taste and adjust seasoning with salt and pepper as needed.
  6. Serve hot, garnished with chopped green onions.

Notes

Use high-quality vegetable broth for the best flavor. You can add tofu or chicken for extra protein. Store the broth and noodles separately if you have leftovers.
