Ingredients

  • 1/4 cup unsalted butter
  • 2 tablespoons brown butter
  • 3 tablespoons sugar
  • 1 package active dry yeast (approximately 2 1/4 teaspoons)
  • 3 1/2 to 4 cups all-purpose flour
  • 1 teaspoon salt
  • 2 large eggs
  • 2 tablespoons fresh sage, finely chopped
  • Extra flour for dusting
  • Additional melted brown butter for brushing

Instructions

  1. Warm the milk in a small saucepan until it feels warm to the touch. Remove from heat, add sugar and yeast, and stir gently. Let it sit for 5 to 10 minutes until frothy.
  2. Melt the unsalted butter in a skillet over medium heat, swirling gently. Cook for 5 to 7 minutes until golden brown. Remove from heat and cool slightly.
  3. In a large mixing bowl, whisk together the flour and salt. Add the frothy yeast mixture, eggs, and cooled brown butter. Mix until combined.
  4. Knead the dough in the bowl, gradually adding flour until it forms a soft dough. Transfer to a floured surface and knead for 8 to 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a towel, and let it rise in a warm spot until doubled in size, about 1 to 1.5 hours.
  6. Deflate the dough, roll it out, sprinkle chopped sage, and fold it into the dough.
  7. Divide the dough into small balls, arrange in a greased baking dish, cover, and let rise for 30 to 45 minutes.
  8. Preheat the oven to 375°F (190°C). Brush rolls with melted brown butter, sprinkle with salt, and bake for 18 to 20 minutes until golden brown.
  9. Let the rolls cool slightly before serving warm.
