Ingredients

  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/4 cup milk
  • 1 cup powdered sugar (for icing)
  • 23 tablespoons milk (for icing)

Instructions

  1. Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  2. Beat in the egg and vanilla extract into the creamed mixture.
  3. In another bowl, mix the flour, salt, and cinnamon. Gradually incorporate this dry mixture into the creamed mixture.
  4. Roll out the dough on a lightly floured surface and cut it into rectangles.
  5. Spoon the brown sugar filling onto half of the rectangles. Top with the remaining rectangles and press down to seal.
  6. Preheat the oven to 375°F (190°C). Bake the cookies for 15-20 minutes or until golden brown.
  7. Mix powdered sugar with milk to achieve a smooth icing consistency. Drizzle over cooled cookies.

Notes

Use softened butter for easy creaming. Don’t overmix the dough to maintain cookie texture. Chill dough if too sticky, and keep an eye on the baking time.
