Ingredients

  • ½ teaspoon ground cinnamon

  • 1 egg (for egg wash)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In a large bowl, beat the softened butter and brown sugar until light and fluffy.
  4. Mix in the egg and vanilla extract until well combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Wrap the dough in plastic wrap and refrigerate for about 15-20 minutes.
  7. On a floured surface, roll out half of the dough to about ¼ inch thickness and cut into rectangles (approximately 3 by 4 inches).
  8. Place a dollop of your chosen filling in the center of half of the rectangles.
  9. Roll out the remaining dough and cut out an equal number of rectangles to top the filled ones; press down the edges to seal.
  10. Beat the additional egg and brush a thin layer over the tops of the cookies.
  11. Bake for 12-15 minutes or until golden brown.
  12. Let the cookies cool on a wire rack before serving.
