Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
- In a large bowl, beat the softened butter and brown sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Wrap the dough in plastic wrap and refrigerate for about 15-20 minutes.
- On a floured surface, roll out half of the dough to about ¼ inch thickness and cut into rectangles (approximately 3 by 4 inches).
- Place a dollop of your chosen filling in the center of half of the rectangles.
- Roll out the remaining dough and cut out an equal number of rectangles to top the filled ones; press down the edges to seal.
- Beat the additional egg and brush a thin layer over the tops of the cookies.
- Bake for 12-15 minutes or until golden brown.
- Let the cookies cool on a wire rack before serving.
