- 8 oz (225g) penne or spaghetti pasta
- ½ cup grated Parmesan cheese
- ¼ teaspoon red pepper flakes (optional)
Instructions
- In a medium bowl, combine the diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, black pepper, Italian seasoning, and fresh basil. Let this mixture sit for about 10 minutes.
- Season the chicken breasts with salt, black pepper, garlic powder, and paprika.
- Heat 1 tablespoon of olive oil in a skillet over medium-high heat, add the chicken, and cook for 4 to 5 minutes per side until golden brown and cooked through.
- Remove the chicken from the skillet and let rest for 5 minutes before slicing.
- Cook pasta in a large pot of salted boiling water until al dente, then drain and drizzle with olive oil.
- In the skillet with the chicken juices, toss in the cooked pasta, bruschetta topping, sliced chicken, and Parmesan cheese. Mix well.
