  • ½ teaspoon Italian seasoning
  • ¼ cup fresh basil, chopped
  • 2 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • 1 tablespoon olive oil
  • 8 oz (225g) penne or spaghetti pasta
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, combine the diced tomatoes, minced garlic, balsamic vinegar, olive oil, salt, black pepper, Italian seasoning, and fresh basil. Let this mixture sit for about 10 minutes.
  2. Season the chicken breasts with salt, black pepper, garlic powder, and paprika.
  3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat, add the chicken, and cook for 4 to 5 minutes per side until golden brown and cooked through.
  4. Remove the chicken from the skillet and let rest for 5 minutes before slicing.
  5. Cook pasta in a large pot of salted boiling water until al dente, then drain and drizzle with olive oil.
  6. In the skillet with the chicken juices, toss in the cooked pasta, bruschetta topping, sliced chicken, and Parmesan cheese. Mix well.
