- 2 boneless, skinless chicken breasts
- 8 ounces pasta (penne or rotini)
- 2 cups cherry tomatoes, halved
- 1/2 cup fresh basil, chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Parmesan cheese for serving
Instructions
- In a large pan, heat olive oil over medium heat. Season the chicken breasts with salt and pepper, and add them to the pan. Cook until golden and cooked through, about 5-7 minutes per side. Remove from the pan and set aside.
- In the same pan, add minced garlic and halved cherry tomatoes. Sauté for about 2-3 minutes until the tomatoes start to soften and release their juices.
- In a separate pot, cook the pasta according to package instructions. Once cooked, drain it and set aside.
- Slice the cooked chicken and return it to the pan with the tomatoes. Add the cooked pasta and chopped fresh basil, tossing everything together to blend all the flavors well.
- Serve the dish warm by plating it up and topping with grated Parmesan cheese.
