Description

A delightful mix of Brussels sprouts and ground turkey in a flavorful skillet dish that’s quick to prepare and healthy.


Ingredients

  • 1 pound ground turkey
  • 1 pound Brussels sprouts, trimmed and halved
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 teaspoon smoked paprika
  • 1 tablespoon soy sauce
  • 1 tablespoon balsamic vinegar
  • 1/2 cup chicken or vegetable broth
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  2. Add the ground turkey and cook, breaking it apart with a spatula, until browned and cooked through, about 7-8 minutes.
  3. Add salt, pepper, smoked paprika, and red pepper flakes to the turkey. Stir well and then transfer the cooked turkey to a plate and set aside.
  4. In the same skillet, heat the remaining 1 tablespoon of olive oil. Add the chopped onion and minced garlic, and sautรฉ for 3-4 minutes until the onion is translucent.
  5. Stir in the halved Brussels sprouts, and cook for another 5 minutes until they start to caramelize.
  6. Return the cooked turkey to the skillet. Add the soy sauce, balsamic vinegar, and chicken broth. Stir everything well to combine.
  7. Cover the skillet, reduce the heat to medium-low, and let it simmer for about 10 minutes or until the Brussels sprouts are tender.
  8. Adjust seasoning if necessary. Sprinkle with fresh parsley before serving.
