Ingredients

  • 1 head cauliflower, chopped
  • 1 cup buffalo sauce
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1/2 cup cream cheese
  • 1/2 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot of boiling water, blanch the cauliflower for about 5 minutes until tender. Drain well.
  3. In a bowl, mix the buffalo sauce, cream cheese, garlic powder, onion powder, salt, and pepper until smooth.
  4. Fold in the cauliflower florets and half of the shredded cheese into the buffalo sauce mixture.
  5. Transfer the mixture to a casserole dish.
  6. Top with the remaining cheese and breadcrumbs.
  7. Bake for 25-30 minutes or until the top is golden and bubbly.
