Description

A delicious and satisfying plant-based wrap featuring crispy tofu coated in spicy Buffalo sauce, paired with fresh vegetables and creamy vegan ranch.


Ingredients

  • 1 block firm tofu
  • 1/2 cup Buffalo sauce
  • 4 large tortillas
  • 1/2 cup vegan ranch dressing
  • 2 cups lettuce, shredded
  • 1 cup tomatoes, diced
  • 1 cup cucumbers, sliced
  • 1/2 red onion, thinly sliced
  • 1 avocado, sliced

Instructions

  1. Press the tofu to remove excess moisture and cut into strips after pressing.
  2. Toss the tofu strips in Buffalo sauce to coat and bake at 400°F (200°C) for 20-25 minutes, flipping halfway through.
  3. While the tofu is baking, warm the tortillas in a pan or microwave.
  4. Spread vegan ranch dressing on each warmed tortilla.
  5. Layer crispy tofu strips on the ranch, followed by lettuce, tomatoes, cucumbers, red onion, and avocado.
  6. Wrap tortillas tightly around the filling, ensuring everything stays inside.
  7. Serve immediately or store for meal prep.

Notes

For extra flavor, marinate the tofu in Buffalo sauce for a few hours before baking. Store components separately to maintain freshness.
