- 1 egg
- 1 teaspoon vanilla extract

- Dulce de leche for filling
Instructions
- Preheat the oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In another bowl, whisk together the flour, cinnamon, baking soda, and salt.
- Gradually mix the dry ingredients into the wet ingredients until well combined.
- Roll the dough into small balls and place them on a baking sheet lined with parchment paper.
- Flatten each ball slightly and bake for 10-12 minutes until golden.
- Let cool, then sandwich two cookies together with dulce de leche.
Notes
Using room temperature butter is key for the creaming process. If the dough seems too soft, chill for about 30 minutes before baking.
