- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 can (15 ounces) tomato sauce
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/2 cup uncooked white rice
- 4 cups chopped green cabbage
- 2 carrots, peeled and sliced
- 1 teaspoon dried thyme
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
- Add chopped onion and minced garlic to the pot, and sauté until the onion becomes translucent, about 2-3 minutes.
- Stir in beef broth, tomato sauce, diced tomatoes, uncooked rice, chopped cabbage, sliced carrots, thyme, smoked paprika, salt, and pepper; combine well.
- Bring mixture to a boil, reduce heat to a simmer, cover, and cook for about 25-30 minutes or until rice and cabbage are tender.
- Taste and adjust seasonings as needed. Ladle soup into bowls and garnish with chopped parsley before serving.
