Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (15 ounces) tomato sauce
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup uncooked white rice
  • 4 cups chopped green cabbage
  • 2 carrots, peeled and sliced
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add ground beef and cook until browned, breaking it apart with a spoon.
  2. Add chopped onion and minced garlic to the pot, and sauté until the onion becomes translucent, about 2-3 minutes.
  3. Stir in beef broth, tomato sauce, diced tomatoes, uncooked rice, chopped cabbage, sliced carrots, thyme, smoked paprika, salt, and pepper; combine well.
  4. Bring mixture to a boil, reduce heat to a simmer, cover, and cook for about 25-30 minutes or until rice and cabbage are tender.
  5. Taste and adjust seasonings as needed. Ladle soup into bowls and garnish with chopped parsley before serving.
