- 1/2 cup (113g) unsalted butter, melted
- 2/3 cup (140g) granulated sugar
- 1/4 cup (50g) brown sugar
- 1 large egg, room temperature
- 1 tsp vanilla extract
- 1 1/4 cup (180g) all-purpose flour
- 1/2 tsp baking soda
- 1 tsp cornstarch
- 1/2 tsp salt
- 1/3 cup (60g) semi-sweet chocolate chips
- 1/3 cup (60g) Cadbury mini eggs, crushed
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix together the all-purpose flour, baking soda, cornstarch, and salt.
- In another bowl, whisk together the melted butter, granulated sugar, and brown sugar until well-combined. Add the egg and vanilla extract, mixing until smooth.
- Gradually mix the dry ingredients into the wet ingredients. Be careful not to overmix. Fold in the chocolate chips and crushed Mini Eggs.
- Using a large cookie scoop, drop the dough onto the prepared baking sheet, spacing them apart. Bake for about 11 minutes, until the edges are golden, and let them cool on the baking sheet for 5 to 10 minutes before transferring them to a cooling rack.
Notes
For best results, let the melted butter cool slightly before mixing, and use a room-temperature egg for better texture.
