Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, sauté until softened.
- Stir in the Cajun seasoning, paprika, thyme, oregano, and cayenne pepper.

- Bring the soup to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the potatoes are tender.
- Using an immersion blender, blend the soup until smooth.
