Ingredients

  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon cayenne pepper
  • 4 medium potatoes, peeled and diced
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sauté until softened.
  3. Stir in the Cajun seasoning, paprika, thyme, oregano, and cayenne pepper.
  4. Pour in the chicken broth and heavy cream, stirring to combine.
