Description

A hearty, comforting soup bursting with flavor from tender potatoes, savory vegetables, and rich cream, seasoned with Cajun spices.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 4 cups chicken stock or vegetable stock
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 green onions, sliced for garnish
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onions, garlic, bell pepper, celery, and carrot. Sauté until the vegetables are softened, about 5-7 minutes.
  2. Add the diced potatoes to the pot and stir well to combine with the vegetables.
  3. Pour in the chicken or vegetable stock, ensuring that the potatoes are fully submerged. Increase the heat to bring the mixture to a boil.
  4. Reduce the heat to a simmer and add the Cajun seasoning, smoked paprika, cayenne pepper, thyme, salt, and black pepper. Stir to incorporate the seasonings evenly.
  5. Cover the pot and let the soup simmer for 20-25 minutes, or until the potatoes are tender and easily pierced with a fork.
  6. Using an immersion blender, partially blend the soup to achieve your desired consistency, leaving some potato chunks intact for texture. Alternatively, transfer half of the soup to a blender, puree, and return to the pot.
  7. Stir in the heavy cream and shredded cheddar cheese. Allow the soup to heat through until the cheese has melted completely.
  8. Taste the soup and adjust seasoning as needed. If the soup is too thick, you can add a bit more stock or cream to reach your desired consistency.
  9. Serve the Cajun potato soup hot, garnished with crumbled bacon, green onions, and fresh parsley.

Notes

For a vegan version, use coconut cream and swap in vegan cheese. Adjust the spice level by adding more cayenne or hot sauce as desired.
