A hearty and comforting dish that blends tender potatoes and creamy texture with a delightful kick of Cajun spices, ideal for cozy dinners and gatherings.


Ingredients

  • 4 large russet potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (red or green)
  • 2 stalks celery, chopped
  • 1 carrot, chopped
  • 4 cups chicken stock or vegetable stock
  • 1 teaspoon Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled (optional)
  • 2 green onions, sliced for garnish
  • Fresh parsley, chopped for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onions, garlic, bell pepper, celery, and carrot. Sauté for about 5-7 minutes until softened.
  2. Add the diced potatoes and mix well with the sautéed vegetables.
  3. Pour in the chicken or vegetable stock, ensuring the potatoes are submerged. Bring to a boil.
  4. Once boiling, reduce heat to a simmer and stir in Cajun seasoning, smoked paprika, cayenne pepper, thyme, salt, and pepper.
  5. Cover the pot and let simmer for 20-25 minutes, until the potatoes are tender.
  6. Use an immersion blender to partially blend the soup, leaving some chunks for texture.
  7. Stir in heavy cream and shredded cheddar cheese until melted.
  8. Taste and adjust seasoning if needed. Add more stock or cream if too thick.
  9. Serve hot, garnished with crumbled bacon, green onions, and parsley.

Notes

For a vegetarian version, use vegetable stock and omit bacon. Adjust the spice level to preference and consider blending in extra cream for additional richness.
