A flavorful and vibrant Cajun Sausage and Rice Skillet that combines hearty sausage, colorful bell peppers, and fresh spinach, perfect for a quick and satisfying meal.

- 1 Tablespoon butter (or ghee, or olive oil for dairy-free)
- 1 (12-ounce) package kielbasa sausage (sliced)
- 2 bell peppers (diced)
- 3 green onions (sliced)
- 1 clove garlic (minced)
- 1–2 cups spinach (roughly torn or chopped)
- 4 Tablespoons tomato paste
- 1 cup chicken broth or vegetable broth
- 1/2–1 teaspoon Cajun seasoning
- 1/4 teaspoon salt (or to taste)
- 3 cups cooked rice
- 2–3 Tablespoons chopped cilantro or parsley for garnish (optional)
- Black pepper or hot sauce (to taste)
Instructions
- In a large skillet over medium heat, warm the butter or olive oil. Add the sliced sausage and cook for 8-10 minutes until browned and caramelized. Remove from the skillet and set aside.
- In the same skillet, toss in the diced bell peppers and cook for 4-5 minutes until crisp-tender. Cook longer if softer peppers are desired.
- Add green onions, garlic, and spinach into the skillet, sautéing for 1-2 minutes until the spinach wilts and garlic is fragrant. Remove and set aside.
- To the empty skillet, add tomato paste, broth, Cajun seasoning, and salt, stirring well for 3-4 minutes until slightly thickened. Taste and adjust seasoning.
- Return the sausage and sautéed veggies to the skillet, then add the cooked rice. Mix well and cook for an additional 1-2 minutes. Adjust seasoning if needed and serve hot, garnished with cilantro or parsley if desired.
Notes
Use fresh vegetables and spices for the best flavor. Feel free to modify the sausage type to suit your preferences.
