Ingredients
- Boneless, skinless chicken breasts – 4
- Olive oil – 2 tablespoons
- Garlic, minced – 3 cloves
- Salt and black pepper – to taste
- Cherry tomatoes, halved – 1½ cups
- Fresh mozzarella, sliced or torn – 8 ounces
- Fresh basil leaves, torn – ¼ cup
- Balsamic glaze (optional) – for drizzling
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken breasts dry and season them with salt and pepper.
- In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
- Lower the heat, add the minced garlic, and cook for about 30 seconds until fragrant.
- Scatter the halved cherry tomatoes over the chicken and place slices of mozzarella on top.
- Transfer the skillet to the oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F, and the cheese is melted and bubbly.
- Remove from the oven, sprinkle with torn basil, drizzle with balsamic glaze, and serve warm.
