Description

A delightful dish combining juicy chicken, fresh mozzarella, cherry tomatoes, and basil for a simple yet satisfying meal.


Ingredients

  • Boneless, skinless chicken breasts – 4
  • Olive oil – 2 tablespoons
  • Garlic, minced – 3 cloves
  • Salt and black pepper – to taste
  • Cherry tomatoes, halved – 1½ cups
  • Fresh mozzarella, sliced or torn – 8 ounces
  • Fresh basil leaves, torn – ¼ cup
  • Balsamic glaze (optional) – for drizzling

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season them with salt and pepper.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat. Sear the chicken for 4-5 minutes on each side until golden brown.
  4. Lower the heat, add the minced garlic, and cook for about 30 seconds until fragrant.
  5. Scatter the halved cherry tomatoes over the chicken and place slices of mozzarella on top.
  6. Transfer the skillet to the oven and bake for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F, and the cheese is melted and bubbly.
  7. Remove from the oven, sprinkle with torn basil, drizzle with balsamic glaze, and serve warm.
