Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 apples, peeled and thinly sliced
  • 1 teaspoon ground cinnamon
  • 2 tablespoons granulated sugar (for apples)
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/4 cup unsalted butter, cold and cubed
  • 1/4 cup caramel sauce (for drizzling)

Instructions

  1. Preheat the oven to 350°F (175°C). Line a 9×9 inch baking dish with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and granulated sugar in a bowl. Press the mixture into the bottom of the baking pan to form a crust. Bake for 8-10 minutes and let cool.
  3. In a separate bowl, beat cream cheese, 1/2 cup sugar, eggs, and vanilla until smooth. Pour this mixture over the cooled crust.
  4. Toss sliced apples with cinnamon and 2 tablespoons of sugar. Layer the spiced apples over the cheesecake filling.
  5. Mix all-purpose flour, brown sugar, and cold butter in another bowl until it resembles coarse crumbs. Sprinkle this over the apple layer.
  6. Bake for 35-40 minutes until golden. Let cool to room temperature, then refrigerate for at least 3 hours before serving.
  7. Before serving, drizzle with caramel sauce, slice into bars, and enjoy!
