A delightful blend of flavors combining caramelized soy chicken with a savory garlic ginger broth, perfect for a comforting dinner.


Ingredients

  • 2 tablespoons soy sauce
  • 1 tablespoon dark soy sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 4 pieces boneless chicken thighs
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 cups chicken broth
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 2 cups cooked white rice
  • Chopped green onions, for garnish
  • Sesame seeds, for garnish

Instructions

  1. In a bowl, mix together the soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar. Add chicken thighs and marinate for at least 15 minutes.
  2. Heat vegetable oil in a pot over medium heat. Add minced garlic and grated ginger, sautéing until fragrant, about 1-2 minutes.
  3. Add the marinated chicken thighs to the pot. Sear until golden brown, about 3-4 minutes per side.
  4. Pour in the chicken broth and sesame oil, bring to a boil, then reduce heat and simmer for about 15 minutes.
  5. Serve by placing cooked rice in a bowl, topping with chicken and broth. Garnish with chopped green onions and sesame seeds.

Notes

Marinating the chicken longer will enhance flavor. For a spicier kick, add red chilies or sriracha to the broth.
