Description
A comforting dish of caramelised soy chicken in a flavorful garlic ginger broth served over rice.
Ingredients

- 500 g boneless skinless chicken thighs, cut into bite-sized pieces
- ¼ cup soy sauce
- 2 tablespoons brown sugar
- 4 cloves garlic, minced
- 2 teaspoons fresh ginger, minced or grated
- 4 cups chicken broth
- 1 cup jasmine or basmati rice
- 1 onion, finely chopped
- 2 green onions, sliced for garnish
- 1 tablespoon sesame oil
- Vegetables (optional), such as bok choy or spinach
Instructions
- Cook the rice according to package instructions.
- In a large skillet over medium-high heat, add sesame oil and let it heat for a minute. Toss in chicken pieces and cook until golden brown, about 5 minutes.
- Add minced garlic, ginger, soy sauce, and brown sugar to the skillet. Stir and cook for another 5 minutes until chicken is well-coated and sauce thickens slightly.
- Pour in chicken broth and bring to a gentle simmer. If using, add any optional vegetables. Cook for an additional 10 minutes to meld flavors.
- Ladle the broth and chicken over the cooked rice in bowls, and garnish with sliced green onions. Serve warm.
Notes
Use boneless skinless chicken thighs for best flavor. Adjust seasonings to taste, and consider adding peanuts or cashews for extra crunch.
