- 12 oz pasta (any shape, preferably spaghetti, penne, or linguine)
- 2 tablespoons olive oil
- 1 large yellow onion, thinly sliced
- 3 cloves garlic, minced
- Salt and pepper, to taste
- 3 tablespoons olive oil (for chili oil)
- 1 tablespoon red chili flakes
- 1 teaspoon paprika
- 1 small garlic clove, thinly sliced
- 1 teaspoon soy sauce
- Grated Parmesan cheese, to taste
- Fresh basil or parsley, chopped
- Extra chili flakes, optional
Instructions
- In a large skillet, heat 2 tablespoons of olive oil. Add the sliced onion and a pinch of salt. Cook on low heat until deep golden brown, about 15-20 minutes.
- In a separate pan, combine 3 tablespoons of olive oil, red chili flakes, paprika, and sliced garlic. Heat gently until fragrant, then stir in soy sauce.
- Boil salted water and cook pasta according to package instructions until al dente. Reserve a cup of pasta water.
- Add cooked pasta to the skillet with caramelized onions. Mix well, adding reserved water for desired creaminess.
- Drizzle chili oil over pasta, toss, and serve hot. Top with Parmesan cheese and chopped herbs.
Notes
Use quality extra virgin olive oil for the best flavor. Adjust chili flakes for desired spice level.
