- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder

- 1 cup long-grain white rice
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1 1/2 cups chicken broth
- 1/2 cup coconut milk
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped red bell pepper
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium heat.
- Season chicken thighs with cumin, paprika, turmeric, allspice, cinnamon, garlic powder, onion powder, salt, and black pepper.
- Place seasoned chicken thighs in the skillet, cooking for 6 to 8 minutes per side until browned.
- Remove chicken; add onion, red bell pepper, and green bell pepper to the skillet. Cook for 4 to 5 minutes until softened.
- Stir in minced garlic and sauté for 1 minute.
- Add uncooked rice to the skillet, stirring to coat with oil and vegetables.
- Pour in diced tomatoes, chicken broth, and coconut milk, stirring to combine.
- Nestle chicken back into the mix, bring to a simmer, cover, and reduce heat to low.
- Cook for 20 to 25 minutes until rice is tender and chicken is cooked through.
- Remove from heat, let rest for 5 minutes, fluff rice with a fork, and garnish with cilantro and lime wedges.
Notes
