- 2 cups granulated sugar
- 1 teaspoon baking powder

- 4 large eggs
- 3 cups grated fresh carrots
- 1 cup walnuts or pecans (optional)
- 1 cup raisins (optional)
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to prevent sticking.
- Whisk the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until well combined.
- Mix the vegetable oil and eggs until smooth. Add in the grated carrots and stir until evenly mixed.
- Gradually add the wet mixture to the dry ingredients. Mix gently until just combined. If you like, fold in the nuts and raisins.
- Pour the batter evenly into the prepared pans and smooth the top with a spatula.
- Bake in the preheated oven for 25-30 minutes. Cool the cakes in the pans for about 10 minutes before transferring them to wire racks to cool completely.
- Beat together cream cheese and softened butter until creamy. Gradually add in the powdered sugar and vanilla extract until everything blends smoothly.
- Spread the cream cheese frosting between the layers and on top of the cake. Slice and enjoy!
