Delightful twist on traditional carrot cake, these moist, spiced carrot cake bars are perfect for any occasion.

- 2 cups grated carrots
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp salt
- 1/2 cup chopped walnuts or pecans (optional)
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the grated carrots, vegetable oil, granulated sugar, brown sugar, and eggs. Stir until well blended.
- In another bowl, whisk together the flour, baking powder, baking soda, cinnamon, ginger, and salt.
- Slowly add the dry ingredients to the carrot mixture, mixing gently until just combined. If you’re using nuts or raisins, fold them in at this stage.
- Pour the batter into your prepared baking dish and smooth it out evenly. Bake for about 25 minutes or until a toothpick inserted into the center comes out clean.
- Once baked, allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Cut into squares and enjoy!
Notes
For added flavor, you can top with cream cheese frosting or sprinkle with powdered sugar after cooling.
