- 1 teaspoon baking powder

- 2 large eggs
- 3/4 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 1 1/2 cups finely grated carrots
- 8 oz cream cheese
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, and a pinch of salt.
- In a large bowl, beat the eggs with brown sugar, granulated sugar, and vegetable oil until smooth.
- Gradually combine the dry ingredients into the wet mixture and mix until just combined. Fold in the grated carrots.
- Pour the batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
- Allow them to cool completely before frosting with cream cheese mixture.
