  • 0.5 cup chopped walnuts (optional)
  • 16 oz cream cheese (softened)
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 tbsp sour cream
  • 8 oz cream cheese (softened)
  • 0.25 cup unsalted butter (softened)
  • 1 tsp vanilla extract
  • 1.5 cups powdered sugar
  • 2 tbsp milk or cream (as needed)

Instructions

  1. Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by lining the bottom with parchment paper.
  2. Mix together the dry ingredients for the carrot cake: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Whisk together the wet ingredients: vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  4. Combine the two mixtures and gently fold in the grated carrots, crushed pineapple, and walnuts if using.
  5. Beat the cream cheese in another bowl until smooth, then add sugar, eggs, vanilla extract, and sour cream for the cheesecake layer.
  6. Layer your cake by pouring half of the carrot batter into the prepared pan, spreading the cheesecake layer on top, then pouring in the remaining carrot batter.
  7. Bake in the preheated oven for about 60-70 minutes or until set in the middle.
  8. Cool completely and then chill in the fridge for at least 4 hours or overnight.
  9. Prepare the frosting by beating together cream cheese, butter, vanilla extract, and powdered sugar until creamy, adjusting with milk if needed.
  10. Frost the cooled cake generously, garnishing with chopped walnuts or shredded carrots if desired.
