- 8 oz cream cheese (softened)
- 0.25 cup unsalted butter (softened)
- 1 tsp vanilla extract
- 1.5 cups powdered sugar
- 2 tbsp milk or cream (as needed)
Instructions
- Preheat your oven to 325°F (160°C) and prepare a 9-inch springform pan by lining the bottom with parchment paper.
- Mix together the dry ingredients for the carrot cake: flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Whisk together the wet ingredients: vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract.
- Combine the two mixtures and gently fold in the grated carrots, crushed pineapple, and walnuts if using.
- Beat the cream cheese in another bowl until smooth, then add sugar, eggs, vanilla extract, and sour cream for the cheesecake layer.
- Layer your cake by pouring half of the carrot batter into the prepared pan, spreading the cheesecake layer on top, then pouring in the remaining carrot batter.
- Bake in the preheated oven for about 60-70 minutes or until set in the middle.
- Cool completely and then chill in the fridge for at least 4 hours or overnight.
- Prepare the frosting by beating together cream cheese, butter, vanilla extract, and powdered sugar until creamy, adjusting with milk if needed.
- Frost the cooled cake generously, garnishing with chopped walnuts or shredded carrots if desired.
