- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Add the dry ingredients to the wet ingredients, mixing until fully integrated.
- Fold in the grated carrots, along with any nuts or raisins if using.
- Mix the cream cheese and powdered sugar until smooth for the filling.
- Spoon a small amount of dough onto a baking sheet, add a dollop of cream cheese filling, and top with another mound of cookie dough.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow to cool on the baking sheet before transferring to a wire rack.
Notes
