Description

Delicious and chewy cookies that bring the comforting flavors of carrot cake into a handheld treat, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup chopped walnuts or pecans
  • 1/2 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
  3. In a large bowl, cream the softened butter with the brown and granulated sugars until light and fluffy.
  4. Beat in the egg and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing until just combined.
  6. Fold in the grated carrots, nuts, and raisins if using.
  7. Using a tablespoon, drop the dough onto the prepared baking sheet, spacing them 2 inches apart.
  8. Bake for 12-15 minutes or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Use freshly grated carrots for the best flavor. Chill the dough for thicker cookies.
