- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 1/2 cup chopped walnuts or pecans
- 1/2 cup raisins (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and nutmeg.
- In a large bowl, cream the softened butter with the brown and granulated sugars until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry mixture to the wet mixture, mixing until just combined.
- Fold in the grated carrots, nuts, and raisins if using.
- Using a tablespoon, drop the dough onto the prepared baking sheet, spacing them 2 inches apart.
- Bake for 12-15 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Use freshly grated carrots for the best flavor. Chill the dough for thicker cookies.
