Description

Ingredients

  • 4 large eggs
  • 3 cups grated carrots
  • 1 teaspoon vanilla extract
  • Cream cheese glaze (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Mix the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg in a bowl.
  3. Combine the vegetable oil, eggs, grated carrots, and vanilla extract in another bowl.
  4. Combine the wet and dry mixtures gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 45-55 minutes, checking with a toothpick for doneness.
  7. Cool the loaf in the pan for 10 minutes, then transfer to a wire rack.
