- 4 large eggs

Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In a separate bowl, mix the wet ingredients: combine oil, eggs, grated carrots, pineapple, and vanilla.
- Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in nuts if using.
- Divide the batter evenly between the prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Cool in the pans for 10 minutes, then transfer to wire racks and cool completely before frosting.
- Frost with cream cheese frosting if desired.
