Description

A delightful treat combining moist cake with the warm flavors of spices and sweetness of carrots, perfectly complemented by cream cheese frosting.


Ingredients

  • 1 cup vegetable oil
  • 4 large eggs
  • 3 cups grated carrots
  • 1 cup crushed pineapple, drained
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In a separate bowl, mix the wet ingredients: combine oil, eggs, grated carrots, pineapple, and vanilla.
  4. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in nuts if using.
  5. Divide the batter evenly between the prepared pans.
  6. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  7. Cool in the pans for 10 minutes, then transfer to wire racks and cool completely before frosting.
  8. Frost with cream cheese frosting if desired.
