Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, whisk together the all-purpose flour, sugar, ground cinnamon, baking powder, and salt.
- In another bowl, combine the vegetable oil, eggs, vanilla extract, and grated carrots.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Transfer the batter to the prepared loaf pan and bake for 55-65 minutes or until a toothpick inserted in the center comes out clean.
Notes
Use fresh carrots for best results. Allow the cake to cool to prevent sogginess. You can replace chopped nuts with dried fruits for variety.
