Description

A vibrant stir-fry featuring crispy tofu, crunchy cashews, and an array of fresh vegetables, all bathed in tasty soy sauce.


Ingredients

  • 1 block firm tofu
  • 1 cup cashews
  • 2 bell peppers, chopped
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Press the tofu to remove excess moisture and cut into cubes.
  2. Heat vegetable oil in a pan over medium heat.
  3. Add tofu cubes and cook until crispy on all sides, about 8–10 minutes. Remove and set aside.
  4. In the same pan, sauté the onions, garlic, and ginger until fragrant, about 2 minutes.
  5. Add bell peppers, broccoli, and carrots; stir-fry until tender, about 5–7 minutes.
  6. Return crispy tofu and cashews to the pan, pour in soy sauce and stir well.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

Notes

Pressing the tofu is crucial for achieving crispiness. Ensure oil is hot to avoid sticking. Use fresh vegetables for best flavor.
