- 1 block firm tofu
- 1 cup cashews
- 2 bell peppers, chopped
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 3 tablespoons soy sauce
- 2 tablespoons vegetable oil
- Salt, to taste
- Pepper, to taste
Instructions
- Press the tofu to remove excess moisture and cut into cubes.
- Heat vegetable oil in a pan over medium heat.
- Add tofu cubes and cook until crispy on all sides, about 8–10 minutes. Remove and set aside.
- In the same pan, sauté the onions, garlic, and ginger until fragrant, about 2 minutes.
- Add bell peppers, broccoli, and carrots; stir-fry until tender, about 5–7 minutes.
- Return crispy tofu and cashews to the pan, pour in soy sauce and stir well.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
Pressing the tofu is crucial for achieving crispiness. Ensure oil is hot to avoid sticking. Use fresh vegetables for best flavor.
