Description

Deliciously spiced chai cookies with warm flavors, perfect for any occasion.


Ingredients

  • ½ cup vegan butter (preferably Earth Balance sticks)
  • ½ cup + 2 Tbsp dark brown sugar (or light brown sugar)
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom
  • ¼ tsp ground ginger
  • ⅛ tsp star anise (optional)
  • ⅛ tsp black pepper (optional)
  • 1 flax egg (1 Tbsp ground flaxseed + 3 Tbsp water, rested 510 mins)
  • 1 tsp vanilla bean paste or vanilla extract
  • 1 cup + 2 Tbsp all-purpose flour
  • ¼ tsp salt
  • ½ tsp baking soda
  • 2 Tbsp granulated sugar (optional, for rolling)

Instructions

  1. Cream together the vegan butter, brown sugar, and spices until fluffy.
  2. Add the prepared flax egg and vanilla, whipping for 30 seconds.
  3. Sift together the flour, baking soda, and salt; fold into the wet mixture until just combined.
  4. Chill the dough for at least an hour in a covered bowl.
  5. Preheat the oven to 350°F and line a baking tray with parchment paper.
  6. Scoop 10–12 balls of dough, rolling in sugar if desired.
  7. Space dough balls on the tray about 2 inches apart.
  8. Bake for 11–13 minutes until edges are browned; tap tray on counter once out of oven.
  9. Allow cooling on tray for 5–10 minutes before serving.

Notes

Tip: Bake in smaller batches for consistent texture, and avoid skipping the chilling step to enhance flavors.
